The new New York Grading Regulations take effect January 1 2015.
They are as follows:
New Grading Regulations for New York State
Golden Color
Delicate Taste
&
Pale golden color and mild maple flavor.
Amber Color
Rich Taste
&
Tawny amber color and rich maple flavor.
Dark Color
Robust Taste
&
Dark bronze color and full-bodied maple flavor.
Very Dark Color
Strong Taste
&
Very dark color and strong maple flavor.
Maple Syrup Standard of Identity Implementation Policy
Effective January 1, 2015, all Maple Syrup bottled and offered for sale in New York State is required to be accurately graded pursuant to NYCRR Part 270 (new standard).
For maple syrup produced and packaged prior to the effective date of January 1, 2015, existing regulations
(Article 13 D / Parts 160u, 203, 204, 175, 176, 276-1 and 276-4; old standard), will apply until January 1, 2016.

Final wholesale transactions (sale to retail establishments) of maple syrup graded under Article 13 D / Parts 160u, 203, 204, 175, 176, 276-1 and 276-4 (old standard) and bottled for retail sale, must include only product bottled prior to January 1, 2015 *. Any bulk maple syrup distributed and/or bottled after January 1, 2015 must be accurately graded pursuant to NYCRR Part 270 (new standard).

Direct retail sale of maple syrup from a manufacturer, bottled after January 1, 2015 must be accurately graded pursuant to NYCRR Part 270 (new standard). Direct retail sale of maple syrup bottled before the effective date of January 1, 2015 *, may be graded according to Article 13 D / Parts 160u, 203, 204, 175,176, 276-1 and 276-4 (old standard). This product may be marketed in New York State until January 1, 2016.
Maple syrup imported from other states and/or countries must meet the same requirements as above (product bottled after January 1, 2015 must be accurately graded pursuant to NYCRR Part 270 – new standard).
Manufacturers are strongly encouraged to maintain an accurate method of identifying the date of bottling for maple syrup packaged prior to January 1, 2015.
